Kadai Paneer is one of my favourite paneer side dish that goes well with Chappathi or roti.It is very easy to prepare if we have the paneer handy.Chop the vegies, grind the kadai masala and fry everything together for a few minutes and there you have the colorful and vibrant Kadai paneer.This is a kind of semi dry side dish.
Preparation time: 10 minutes
Cooking time: 15 minutes

Ingredients:
Panneer cubed: 1 cup
Capsicum chopped: 1 medium
Onion chopped: 1 medium
Tomatoes chopped: 2 medium
Ginger finely chopped: 2 tsp
Green chilli: 1
Butter: 2 tablespoon
Chilli powder: 1/2 tsp
Coriander powder: 1/2 tsp
Garam masala powder: 1/4 tsp
Salt: 1 tsp
Sugar: 1/4 tsp
Coriander leaves: a handful
Kadai Masala:
Red chillies: 3 or 4
Coriander seeds: 1 tablespoon
Pepper corns: 5
Cumin seeds: 1/2 tsp
Kasuri methi: 2 tsp

Notes:
Adjust the red chillies according to spice level required
Kadai masala can also be prepared ahead and stored
Do not overcook the capsicum. The crispness should be retained

Coriander powder: 1/2 tsp

Sugar: 1/4 tsp
Coriander leaves: a handful
Kadai Masala:
Red chillies: 3 or 4
Coriander seeds: 1 tablespoon
Pepper corns: 5
Cumin seeds: 1/2 tsp
Kasuri methi: 2 tsp
Procedure:
- Dry roast the ingredients for kadai masala except kasuri methi
- Once they are slight brown switch off the stove add add kasuri methi
- Grind it to a coarse powder after it cools down
- Heat 2 tablespoons of butter in a pan and fry the ginger and onion until it turns translucent
- Add part of the kadai masala and fry for a minute
- Next add capsicum and tomato and fry for a while until the tomatoes are mushy.
- Add chilli powder, coriander powder, remaining kadai masala powder,salt & sugar
- Finally add the chopped coriander leaves
