- Mix all the flours (rice flour, besan and fried gram dhal powder) with salt, sesame seeds and chilli powder
- Add butter and mix well
- Now add water and knead to a dough (I used approx little less than 3/4 cup of water)
- Using the 3 star disc on murukku maker and place the dough in the maker
- Heat the oil. Drop a pinch of dough. If the dough raises immediately to the top, the oil is heated well
- Now reduce the flame to medium and pipe the murukkus directly in the oil
- Fry until the sound ceases (The sshh sound ceases when all the moisture is absorbed)
- Drain the murukku in a tissue.
- Repeat with the rest of the dough
Notes:
- Do not add more butter. The muruku will break
- Adding fried gram dhal powder, makes the murukku soft and crisp
- Chilli powder is optional. If adding, do not add more than 1/4 tsp
