Masala dosa is one of the classic South Indian tiffin recipes.The dosa stuffed with mildly spiced potatoes is sure to tickle the taste buds. There are different variations of Masal dosa.This is the basic recipe. The potato filling is very similar to Puri potato masala. However for Puri masala, we add little water and besan to look like a thick gravy.
Ingredients
Dosa batter: 3 cups
Sugar: 1 tsp
Ghee/Oil: as required
For Potato Masala:
Potato: 5 medium sized
Onion chopped lengthwise: 1 medium
Ginger chopped: 2 tsp
Green chillies chopped: 2
Turmeric powder: 1/4 tsp
Salt: to taste
Asafoetida: a pinch
Cashewnuts: 6 (optional)
Green peas: 1/4 cup(optional)
Cumin seeds: 1/2 tsp
Mustard seeds: 1/2 tsp
Curry leaves: a sprig
Coriander leaves: a sprig
Oil: 2 tsp
Procedure:
- Make sure the dosa batter is little thin than the idli batter(Dilute with water as required)
- Add 1 tsp of sugar and mix well. This is for getting the nice brown color
- Cook the potatoes in cooker with enough water for 2 whistles
- Cook the green peas separatly with enough water in a pan for a few minutes.Drain the water
- Allow to cool and peel the potatoes and mash it slightly
- Heat 2 tsp of oil in a pan and add the cumin seeds. Once it starts spluttering add the curry leaves and cashews
- Add the ginger & green chillies and saute for a minute
- Add the onions and fry until it becomes translucent. Add turmeric powder and asafoetida as well
- Finally add the potatoes, green peas and salt and cook for a couple of minutes until all the ingredients are blended well
- Garnish with coriander leaves
For assembling the dosa
Heat the skillet on low-medium heat
Pour a laddle of batter in the center and spread it spirally
Add 1 tsp of ghee/oil and increase the heat to high
Cook until the dosa starts turning brown
Now place the potato filling on the center and fold it on both the sides
Notes:
Chop the onions lengthwise
Cumin seeds and ginger add a nice flavor to the potato
Do not add water while cooking as we do for Puri masala.When stuffed in dosa, it will become soggy
Use ghee instead of oil for making dosa for best results
