I wanted to try something different and exotic for my husband's birthday this year without any elaborate decorations.When I was doing shopping at the grocery store, a pack of mascoporne cheese caught my attention and then decided to bake a Tiramisu cake.Since I want the cake to look regal, I used eggless vanilla sponge cake instead of lady fingers as base so that I can also decorate it.

Ingredients
Egg less Ladies Fingers: around 35 - 40 (Recipe for Savioardi cookies)
Egg less Vanilla Sponge Cake - 1 9 inch cake
Mascorpone Cheese: 8 oz
Heavy whipping cream: 1.25 cups
Powdered sugar: 1/4 cup
Strong Expresso coffee: 1 cup
Chocolate chips: 1/2 cup
Cocoa powder: 1/4 cup
Butter cream icing - 1/2 cup (For decoration)
Chocolate candy melts - Few ( for decoration)
Procedure:
- Mix 1/2 cup of heavy whipping cream with chocolate chips.Microwave this for 1 minute and mix well.
- Whip the remaining cream until stiff peaks form
- Blend the cheese with a whisk and finally fold in the whipped cream
- Cut the cake into 3 layers
- Place one layer of cake as the base and brush 1/3 of the coffee over the cake
- Spread 1/3 of the chocolate ganache
- Spread 1/3 of the cream mixture
- Now place the next layer of cake and repeat steps
- Add the next layer of cake as well and fiinish with mascorpone cheese spread
- Refrigerate the cake for 2 hours
- Crumb coat the cake with butter cream icing
- Sprinkle cocoa powder over the top layer (using a sieve)
- Arrange the ladies fingers on the sides of the cake
- Now decorate the cake as required with buttercream frosting
- Tie a sating ribbon around the cake
- I used candy melts for the chocolate decorations

Blend the cheese and cream |
Spread the coffee syrup |
Spread the chocolate ganache followed by cream cheese mixture |
Sprinkle cocoa powder |
Arrange the lady fingers |
Decorate with butter cream icing |
