PAPAYA HALWA

Last time I bought a huge papaya from the market so that I can make fruit salad for the kids.As usual after having a couple of pieces they refused to eat.I had no idea how to finish off that huge papaya and finally made halwa with it.Both my kids (including me too) have a very sweet tooth and finished off the halwa. The halwa had a beautiful color all naturally and also tasted great. I followed the same recipe for Kasi halwa

Papaya Halwa


Ingredients:
Papaya pureed : 1 cup
Sugar: 1/2 cup
Cardomom powder: a pinch
Ghee: 3 tablespoons
Cashew nuts: 1 tablespoon

Procedure:
  1. Peel the papaya and remove the seeds
  2. Cut into small cubes and grind it in a blender without adding water
  3. Heat 1 tsp of ghee in a pan and fry the cashews and keep it aside
  4. In the same pan heat 1 tablespoon of ghee and add 1 cup of papaya puree and fry for a couple of minutes
  5. Close the pan and let it cook for 10 minutes in medium flame or until most of the moisture is absorbed
  6. Now add 1/2 cup of sugar. The color of the halwa will turn little more dark
  7. Add ghee little by little and keep stirring continously in medium flame
  8. In another 10 -15 minutes the halwa will thicken and comes of the sides of the pan
  9. If you touch the halwa it will be little sticky
  10. Add cardomom powder and mix well and switch off the flame
  11. Garnish with fried cashews.
Notes:
There is no need to add any food color.The papaya itself will give natural color
Increase or decrease the sugar based on the sweetness of the papaya. If the papaya is too sweet 1/2 cup of sugar is enough.Otherwise increase to 3/4 cup
