Tiramisu is a layered Italian dessert and literally means 'pick me up'.This is a combination of crispy Savioardi (Lady fingers) soaked in espresso coffee and layered with rich and creamy mascoporne cheese ,egg whites and marsala wine.Instead of eggs I used whipped cream.Though this dessert looks intimidating, it is actually very easy to prepare.
Ingredients
Eggless Savioardi: Prepared using 1 cup of flour
Mascaporne cheese: 8 oz
Powdered sugar: 1/4 cup
Whipping cream: 1 cup (divided 3/4 +1/4 cup)
Chocolate chips: 1/4 cup
Instant coffee or espresso powder: 2 - 4 tsp
Hot water: 1 cup
Granulated sugar: 4 tsp
Vanilla extract: 1/2 tsp
Procedure:
Filling:
Take 3/4 cream in a bowl with 1/4 cup of powdered sugar and whip the cream until it forms stiff peaks
Take the mascoporne cheese in another bowl and blend it slightly with a hand blender
Now gently fold in the whipped cream and refrigerate until use
Boil 1 cup of water and add coffee powder and sugar and prepare the coffee syrup
Chocolate ganache:
Mix 1/4 cup of heavy whipping cream and 1/4 cup of chocolate chips together
Microwave this for 1 minute and stir well
Allow this to cool to room temperature
Assembling the cake:
- Take a 7" square pan and line it with aluminium foil (or use a spring form pan)
- Dip the lady fingers in coffee syrup for a second and arrange in the pan as a layer
- Spread half of the cream and cheese mixture on top of the lady fingers
- Spread the chocolate ganache (If you are not using chocolate ganache just sprinkle the cocoa powder)
- Arrange another of lady fingers dipped on coffee
- Spread the remaining mascoporne mixture
- Sprinkle 2 tablespoons of cocoa powder using a sieve
- Cover with a cling wrap and refrigerate overnight
- Remove the cake by lifting the aluminum foil from the pan
- Slice the cake as required
Notes:
Store bought lady fingers can be used to make the process very easy (This will contains eggs unless you find a vegan one)
Using chocolate ganache is optional but it enhances the taste
I used Bru instant coffee powder for the coffee syrup. This works well
If Mascaporne cheese is not available it can be prepared with heavy cream as well.
Alternatively cream cheese can also be used but the taste will be different
Always keep refrigerated.The cake stays well for 3-4 days (have not tried beyond that)
My daughter loves this a lot. I used to prepare for her by replacing the coffee syrup with hot chocolate
