I used to make the breakfast recipes really simple for the week days.Mostly it used to be sandwiches,pancakes or just cereal.Out of all these my daughter loves only pancakes.I have tried lots of variation of eggless pancake recipes and finally settled for this one.I use only whole wheat pastry flour and each time the pancakes turns out to be soft and fluffy.

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves : 8 - 10 pancakes
Ingredients
Whole wheat pastry flour/All purpose flour: 1 cup
Milk: 1.25 cups
Butter: 2 tablespoon
Baking powder: 2 tsp
Brown sugar: 1 tablespoon
Vegetable oil: 1 tablespoon
Vanilla extract: 1 tsp
Procedure
1) Melt the butter in microwave for 10 seconds
2) To this add milk, vegetable oil, water and vanilla extract and mix well
3) Now add the dry ingredients and whisk well without forming lumps. Do not overmix
4) Heat the pan and once it becomes hot add 2 tablespoon of batter
5) Add some melted butter around the pancakes and cook in low flame until the bubbles starts appearing
6) Now flip the pancake and cook for some more time until it is brown on both the sides
7) Serve hot with maple syrup
Notes:
Cook the pancake in low to medium flame. If cooked in high, the inner part may not cook well
The pancakes should be flipped only after the bubbles starts appearing
The batter can be made ahead and refrigerated
Other than maple syrup, chocolate syrup, condensed milk can also be used for topping
Whole wheat flour can be replaced with regular atta too.

DeleteI did not add water. I used 1.25 cups of milk for thick pan cakes. If you would like the pan cakes to be thin add 2 tablespoons of water
