I tried the banana bread with yeast and it turned out to be more flavorful than the quick bread version with baking powder.Though little bit time consuming, it is well worth it

Ingredients
Whole wheat flour: 2 and 1/4 cups
Sugar: 1 cup
Banana (ripe long variety) : 3 pureed
Vanilla extract: 1 tsp
Active dry yeast: 1 tsp
Canola oil: 1/2 cup
Warm Milk: 1/2 cup
Salt:1/2 tsp
Cinnamon powder: 1/2 tsp (optional)
Walnuts: 1/2 cup (optional)
Procedure:
Step1:
Mix the yeast and warm milk and let it sit for 10 minutes
Step2:
Puree the bananas
Step3:
Mix all the dry ingredients together (Flour, Sugar and salt)
Step4:
Now add all the wet ingredients and mix well
Step5:
Cover the dough and let it rest for 2 hours to rise
Step6:
Mix the dough again and gently fold in the chopped walnuts
Step7:
Pour the batter into a loaf pan (9" by 5")
Step8:
Let it rise again (approx 1.5 hrs)
Step9:
Bake in a preheated oven of 325F for 1 hour

ReplyDeleteAmended it a little as follows...
used 1/2 cup sugar not 1 cup, I forgot the oil (duh), used instant yeast (added about 1/4 more), used plain cooking flour (not wholemeal), and soaked drained raisins, and 1/2 shredded carrot. Added double cinnamon and same of nutmeg.
Once cooked because i forgot the damn oil, i mixed some honey and oil & together and glazed the top, and underneath (after turning it out on a rack). Covered it and left it 8 hours... till dinner) DELICIOUS!!!! SOFT it's not fluffy but has a great consistency. I can't say how delicious it is/was.
Note on the second rise my kitchen was about 85-90 degrees so i only let it rise 45 mins. And I resisted the urge to open the oven while baking
