As part of Maitri friendship chain I was matched with Nancy of Kitchen Gypsies.The mystery ingredient that I received was couscous. She has also sent me a cute little bunny.The bunny is nowadays busy in my daughter's hands.
I have heard of couscous but I have never seen it before.Obviously this is my first recipe with Couscous.
Nancy gave me a hint to identify the ingredient after which I figured out. Thanks Nancy for expanding my cooking horizon with a new ingredient and thank you so much for the little bunny.
Yesterday I used half of the cup of couscous to make a healthy veggie salad and remaining half to make a dessert(Will post the recipe in my next post).My whole family liked the salad. Couscous brings a wonderful texture to the salad.And the recipe is very simple which does not involve any cooking but tastes absolutely great.
Ingredients
Couscous: 1/2 cup
Bell pepper chopped: 1/2 cup
Tomato chopped: 1/2 cup
Green onions chopped: 1/2 cup
Cucumber chopped: 1/2 cup
Cilantro chopped: 2 tablespoon
Green chilli chopped: as per taste
Lime juice: 1 tsp
Salt: as per taste
Pepper powder: 1/4 tsp
Step1:
Mix couscous and 1.5 cups of boiling water in a bowl and leave it closed for 15 min.
Step2:
Fluff the couscous well breaking up any lumps. Add salt
Step3:
Add all the vegetables and mix well
Step4:
Season with pepper and lime juice
Step5:
Serve at once or can be refrigerated as well.
