When it comes to breakfast I prefer making muffins only using wheat flour.I adapted the basic recipe from here and made some changes to make it eggless. This works well with Indian Atta too.This muffin is also low in calories as much of the fat is replaced with applesauce
Preparation time: 20 min
Cooking time: 30 min
Serves: 12 muffins
Ingredients
Whole wheat pastry flour /Atta - 1 3/4 cup
Sugar - 3/4 cup
Bananas(ripe) - 3 long sized (approx 1.5 cups)
Baking powder: 1.5 tsp
Baking soda: 1/4 tsp
Apple sauce with cinnamon flavor: 4 oz
Milk: 1/2 cup
Oil: 1/8 cup
Unsalted butter: 2 tablespoon
Salt: 1/4 tsp
Vanilla Extract: 1 tsp
Walnuts: 1/4 cup

Pour into muffin pans and bake at 350F (preheated) for 25 - 30 minutes or until a skewer inserted comes out clean
Step6:
Allow to cool and serve
