Coconut Biscuit

Level: Easy
Preparation time: 10 min
Cooking time: 20 min
Serves: 25 biscuits
Eggless Coconut Cookies

Ingredients
All purpose flour/maida - 1 cup
Unsalted butter - 1 stick
Baking powder - 1/4 tsp
Sugar - 1/2 cup
Rava/Suji (fine variety) - 1/4 cup
Sweeted dessicated coconut - 1 cup
Cardomom - 5 crushed

Procedure:
Step 1:
Slightly toast the cococnut for 2 minutes

Step2:
Mix butter and sugar and beat it to a smooth paste

Step3:
Add flour, rava,coconut,crushed cardomamom, baking powder and mix well.

Step4:
Knead the dough with hand for 4-5 minutes such that it resembles chappathi dough

Step5:
Cover it with a plastic wrap and refrigerate for 30 minutes

Step6:
Preheat the oven to 325 F

Step7:
Make small balls and press them on a cookie sheet(makes around 25 balls). keep them 1 " apart

Step8:
Bake in the oven for 20 minutes (Until the sides become golden brown)

Step9:
Cool it on a wire rack for 5 minutes and serve

    For donuts, u can replace egg by either yogurt or milk. For each egg add about 2-3 tbsp of milk. Don't replace by applesauce or any other fruit product, as it may make the donuts heavier.

  4. Coconut bisuits was one of my childhood favourites. We used to get similar ones in the neighbourhood bakery..
