Appalam Kuzhambu

This is a very easy recipe that comes handy when we run out of vegetables.It is a quick recipe that tastes delicious too. I usually prepare this along with Paruppu Thuvayal when a lazy lunch.


Appalam Kuzhambu

Ingredients:
Ulundhu appalam (urad dhal papad) : 3 to 4
Tamarind: Lemon sized
Chilli powder: 1.5 tsp
Coriander powder: 1 tsp
Turmeric powder: a pinch
Salt: 1 tsp
Grated jaggery: 1.5 tsp
Rice flour: 2 tsp
Asafoetida: a pinch
Mustard seeds: 1 tsp
Fenugreek seeds (Vendhayam): 1/2 tsp
Channa dhal ( kadala parupu): 1 tsp
Oil: 3 tsp
Curry leaves: 1 sprig
Red chilli: 1

Procedure:
1)Soak the tamarind in water for about 30 min and extract the juice
2) Meanwhile break the pappad into 4 pieces and microwave for around 1 minute in HIGH.

3)Heat 3 tsp of oil in a pan and add mustard seeds. Once it starts spluttering add channa dhal, fenugreek,red chilli and curry leaves

4) Add the appalam 
5)Add the tamarind extract, chilli powder, coriander powder, salt and bring the mixture to a boil

6) Mix rice flour in  tablespoon of water and add it
7) Add jaggery and hing and boil it in medium flame for about 5-7 minutes

Notes:
Deep fried appalam can also be used.
Also appalam can be fried in direct flame instead of microwave (Sutta Appalam)
While microwaving it is perfectly fine if the appalam is not completely fried.
