EGGLESS BANANA BREAD




Ingredients:
Whole Wheat Flour – 1 cup
All purpose flour - 1 cup
Ripe Bananas – 3 mashed
Butter – 1/2 stick
Sugar – 3/4 cup
Applesauce/Water – 4 oz
Baking Soda – 1 tsp
Salt – 1/4 tsp
Vanilla Extract – 1 tsp
Walnuts chopped – 1/2 cup

Procedure

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Mix all the dry ingredients together (flour, sugar, salt and baking soda)
  3. Puree the bananas or mash well and add apple sauce, vanilla extract and butter and mix well
  4. Add both the dry and wet ingredients together and mix well. Add chopped walnuts
  5. Pour the batter into greased loaf pan
  6. Bake at 375 F for 1 hour
  7. Allow the bread to cool completely and slice them

Butter Cookies






Level: Easy
Preparation time: 10 min
Cooking time: 20 min
Serves: 12-15 cookies


Ingredients:


Unsalted Butter - 1 stick
All purpose flour/maida - 1 cup
Confectioner powdered sugar - 1/2 cup
Cardomom powder - 1 tsp
Baking powder - 1/4 tsp


Procedure:


Step1:
Beat the butter well along with the sugar
Step2:
Sift the flour and baking powder and add it to the butter mixture and mix well


Step3:
Add cardomom powder and knead like chappathi dough
Step4:
Cover it with a plastic wrap and refrigerate for 20 minutess


Step5:
Preheat the oven to 300 Fahrenheit


Step6:
Make around 15 balls with the dough and press each ball in the cookie sheet
Arrange the cookies 2 inches apart
Step7:
Bake the cookies for about 25 minutes (The cookies should not turn brown)


Step8:
Serve once cooled

Banana Dosai

Level: Medium
Preparation time: 10 min
Cooking time: 20 min

Ingredients
Ripe Banana - 2 (long ones) 
Wheat flour/All purpose flour-2 tablespoon
Rice flour - 1/4 cup
Sugar/grated jaggery - 2 table spoon
Cardomom powder - 1tsp
Chopped Cashewnuts- 1 tablespoon 
Chopped Raisins - 1 tablespoon
Ghee - to fry

Procedure
Step1:
Mash the bananas with a potato masher or puree it in a blender(approx 1/2 cup)

Step2:
Add rice flour, wheat flour and cardomom powder and mix well. Do not add water

Step3:
The consistency of the batter should be as idli batter. Add chopped raisins and walnuts

Step4:
Heat a skillet/tawa and shallow fry small dosas with ghee. Keep the flame very low.It may take from 4 - 5 minutes to cook.

Poori Kizhangu masala

Level: Easy
Prepartion time: 10 min
Cooking time: 20 min
Serves: 2
Poori Kizhangu Masala

Ingredients
Onions chopped: 1 medium sized
Pototo boiled and peeled: 2 medium sized
Besan: 1.5 tsp
Turmeric powder: 1/4 tsp
Salt:1 tsp
Green chilli: 1 or 2
Hing: a pinch
Curry leaves: 6
Mustard seeds: 1 tsp
Urad dhal: 1 tsp
Oil: 2 tsp
Cilantro chopped: 1 tsp

Procedure:
Step1:
Cut the boiled potatoes to small cubes and slit the green chillies.

Step2:
Heat oil in a kadai and add mustard seeds.Once it starts spluttering add urad dhal and curry leaves

Step3:
Add onions and green chillies and saute till the onions become translucent

Step4:
Mix besan in 1/4 cup of water and add it to the fried onions

Step5:
Add boiled potatoes,salt, hing and mix well

Step6:
Boil for another 3 - 5 minutes until everything gets cooked well.

Step7:
Garnish with chopped cilantro

Serve with poori

Gagra Choli




Gagra Choli for a 1.5 year old girl

Materials used

Green sik material - 50 cm (Pothys)
Printed cotton cloth (maroon) - 1.5 m (Pothys)
Green cotton lining material for tops - 50 cm (Pothys)
Golden color sequins -  packet
Golden color small beads - 1 packet
Golden color small tubes - 1 packet
White/Silver kundan stones medium size - 2 packets
Silver color small beads - 2 packet
Red kundan stones - 1packet
Golen color border - 3 metres
Elastic thin for smocking - 2 m
Elastic thick for skirt - 1m

All the beads were purchased at Raja Stores at TNagar Ranganathan st

Eggless Princess Birthday Cake


This is my first attempt in decorating a cake. I made this for my daughter's second birthday after watching so many cake decoration videos in youtube. I know that the finishing is not perfect but my daughter loved it a lot.What more can be exciting for her than seeing her barbie dressed up in an edible gown similar to hers...

Things Required

8" Pineapple cake - 2 nos (click for Recipe)
8" Chocolate cake - 1 no (click for Recipe)

The recipe in my older post are for 9" pans. I just increased the baking time to 7 - 9 minutes for the9" pan.

6" Chocolate cake - 1
6" Chocolate cake baked in a muffin pan: 1
Strawberry frosting - 3
Mini stars
Barbie doll - 1
Red color icing - 1
Cake decoration tips
9" plate - 1

Procedure:
1. Bake all the required cakes and allow them to cool
2. Freeze it for 45 minutes so that it will be easy to cut
3. Cut the domes in all the cakes and also cut a 1 inch circle in the center (This is required to insert the doll)

4. Place a pinapple cake in the dinner plate as a base.Tuck in some wax paper or aluminium foil so that it can be removed later(This is to prevent the mess of the frosting)


5. Apply a thick coating of frosting and place another cake on top of it

6.Apply frsting and place another 8" chocolate cake

7: Apply forsting and place 6" chocolate cake
8.Apply frosting and place the cake baked in muffin pan so that it gets the shape of the skirt

9. Crumb coat the cakes (i.e apply a thin layer of frosting all over)

10. Leave it in the freezer for another 45 min
11. Apply a thick layer of frosting all over the cake
12. Using a knife make some swirls
13. Wrap the doll using a plastic wrap and  insert the barbie in the center and apply some frosting with star tip for the bodice


14. Using star tip decorate the bottom of the skirt
After cutting the cake

Carrot Burfi

Level: Easy
Preparation time: 10 min
Cooking time: 10 min


Ingredients

Grated Carrot: 1 cup
Grated coconut: 1/4 cup
Sugar:1.25 cup
Water: 1/4 cup
Cardomon powder: 1/2 teaspoon

Procedure
Step 1:
Have a greased plate ready

Step 2:
In a heavy pan add 1 tsp of ghee and slightly fry the carrot for 2 min (This is to get rid of the raw smell ofcarrot)

Step 3:
Add cococnut, sugar and water and mix well.

Step 4:
Keep on stirring in medium until the mixture frothes(in Tamil it is called poothu varuvathu). At this point thesugar will start to crystalize). Usually this mixture frothes within 10 min

Step 5:
Switch off the flame immediately and transfer it to a greased plate

Step 6:
Once cooled, cut to desired shape and serve
